Fatty acids, general
Fatty acids are organic carboxylic acids with a chain of at least two carbon atoms and a carboxyl group (COOH).
Monounsaturated fatty acids
Fatty acids with one double bond in the structure.
Oleic acid is a Ω 9 fatty acid that occurs in both animals and plants. It is a monounsaturated fatty acid.
Polyunsaturated fatty acids
Polyunsaturated fatty acids are fats with two or more double bonds in the structure.
Saturated fatty acids
Saturated fatty acids have no double bonds in their structure.
Trans fatty acids
By-products which are formed during processing / heating of unsaturated fatty acids, due to the formation of a trans-type double bonds while 'normal' UFA have cis-bonds.
Unsaturated fatty acids
Fatty acids with one or more double bonds in the structure. Can be divided into monounsaturated fatty acids and polyunsaturated fatty acids.
